    The Taggiasca olive, exclusively produced in Western Liguria, is famous throughout the world for its extraordinary quality. Pitted and then preserved in oil, it gives a fragrant and aromatic yet slightly bitter flavour. Excellent in salads, it enriches and complements meat and fish dishes.
